Spam Cookies

I wanted to make a unique snack made with Spam. The spam website did not disappoint. The Spam Butterscotch Cookies recipe was a pleasant surprise and I knew I had to make it. After reading a few negative reviews, I decided to modify the recipe to make the dish more appetizing. Candying the Spam would make it less meat-forward and substituting the butterscotch chips with smaller skor bits would hopefully make it less sweet. I was not expecting that much fat to render out as I fried the spam and it proved to be useful for tying the recipe together. Caramelized/candied spam complimented by brown sugar and skor turned out to be a winning combination! Over 20 people sampled my first batch and all reviews were enthusiastically positive. Don't knock it until you try it. I'm hoping this recipe leads to a full on Spam sponsorship because I have a lot more ideas for Spam recipes...
