About the Recipe

Meat and dessert together at last. This wild recipe was inspired by the Spam Butterscotch recipe from the Spam website (https://www.spam.com/recipes/spam-butterscotch-cookies). I added some sweetness to the spam and meatiness to the butter to make it a more cohesive 5-star dish. Don't judge it until you try it!

Ingredients

Candied Spam

  • 1 can of spam

  • 4 tbsp maple syrup

  • 2 tbsp brown sugar


Cookies

  • 1/4 c spam fat/bacon fat

  • 3/4 c unsalted butter

  • 3/4 c brown sugar

  • 2 eggs

  • 1 tsp vanilla

  • 2 2/3 c all-purpose flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 3/4 c skor bits/butterscotch

Steps

  1. Dice entire can of spam, fry with maple syrup and brown sugar on medium heat until browned on all sides and fat has rendered out.

  2. Scoop spam cubes onto a tray and freeze. Save the rendered fat in the fridge until ready to use.

  3. Cream butter, fat (if you don’t have enough, just use more butter), and brown sugar. Beat in eggs and vanilla.

  4. Mix flour, baking soda, and salt. Then combine with wet ingredients.

  5. Mix in skor bits then spam cubes. Chill in fridge for 20 minutes.

  6. Bake at 350F for 9-10 minutes until lightly browned on the bottom. Let cool on pan.
